Perhaps you are planning a romantic dinner at home for Valentine’s Day. CHCC can help you make that romantic meal by preparing a recipe from “CHCC Cooks,” a cookbook featuring more than 200 recipes submitted by 94 contributors, who are all CHCC employees and volunteers. Many of the offerings are coveted family recipes handed down through generations.
Jennifer Puskas, LCSW, ACS, Pathways Director at CHCC, submitted Chicken Marsala, which would be an ideal Valentine’s Day dinner. Pound four chicken breasts flat and slice one Portobello mushroom cap and a 10 oz. package of white mushrooms. Pour one cup of flour on a MORE Valentine’s Day … Page 2 plate to dredge the chicken, mixing in a tablespoon of basil and a tablespoon of oregano, one teaspoon of salt, and ¼ teaspoon of pepper. Melt four tablespoons of butter in a large skillet and four tablespoons of olive oil. Dredge the chicken in the flour mixture shaking off any excess. Brown the chicken until it is 2/3 of the way cooked on both sides. Add mushrooms and stir. Combine ½ cup Holland House Marsala wine, ¼ cup Holland House cooking sherry, and ¼ cup Holland House cooking wine with lemon. Add a fork full of cornstarch to wines, stirring out the lumps. Pour over chicken and mushrooms and lower heat. Continue to cook until sauce thickens, mushrooms brown and soften, and chicken is cooked through. Turn chicken to cover with sauce on both sides. Serve with steamed broccoli and stove top stuffing.
